Panamar Bakery Group has made a great commitment to fully remodelling the area that houses the Group’s R&D team; it has as surface area of 350m2 divided into offices, meeting rooms, sample rooms and a fully customised workshop with all the machinery necessary in terms of size and power.

Today’s consumers are more demanding and more and more concerned about their nutrition, focusing on aspects such as health without dispensing with the feeling of pleasure or enjoyment. They therefore demand foods that meet these requirements and also cover specific nutritional needs such as being low in sugar, allergen-free, sustainable, for vegan, organic, etc., diets.
The Pilot Plant offers solutions at a pre-industrial scale that can optimise the development of its products or productive processes, test new ingredients, containers, etc., as well as characterising its foods in the laboratory and verify their shelf life, that is, for how long they will retain their quality. On the other hand, they may carry out sensorial analyses of its products, to assess qualities such as aroma, flavour, colour, texture, etc., or acceptance or preference, as well as the intention to buy.
It is a multi-disciplinary unit with the facilities necessary to process and control foods in similar conditions to those used in the bread and pastry lines. This all makes it possible to optimise food preparation processes and toassess the influence of various quality parameters in the products at pilot scale, which makes it possible to reproduce and simulate processes by using a small quantity of raw materials. Moreover, it has laboratory apparatus forphysical-chemical and sensorial (with a sample room) analysis to control the quality of the raw materials and the foods processed.
A human team, made up of specialist professionals in various disciplines of food science, contributes their experience to the various processes, which makes it possible to develop both products clearly in demand in the market and research projects focused on covering future needs.
